Roasted Sugar Snap Peas

Ingredients

1 pound sugar snap peas
2 teaspoons vegetable oil
1 teaspoon low-sodium soy sauce
½ teaspoon salt
¼ teaspoon black pepper

Directions

  1. Wash hands with soap and water.
  2. Rinse or scrub fresh vegetables under running water before preparing.
  3. Preheat oven to 400 degrees F.  Lightly grease a large baking pan.
  4. Place the sugar snap peas in a large bowl. Sprinkle with oil, soy sauce, salt and black pepper. Toss to coat.
  5. Spread the peas onto the baking sheet.
  6. Bake for 8 to 10 minutes. Stir a couple times while roasting.
  7. Refrigerate leftovers within 2 hours.
