Skillet Granola

This simple granola recipe combines whole grain oats, sweet raisins, crunchy seeds, and a touch of sweet honey.

Ingredients

⅓ cup vegetable oil
3 Tablespoons honey or brown sugar (see Notes)
¼ cup powdered milk
1 teaspoon vanilla
4 cups old fashioned rolled oats
½ cup sunflower seed kernels
1 cup raisins

Directions

  1. Wash hands with soap and water.
  2. Warm oil and honey in a skillet for one minute over medium heat (300 degrees F in an electric skillet). Add powdered milk and vanilla.
  3. Stir in oats and sunflower seed kernels, and mix until coated with oil and honey mixture. Heat over medium heat. Stir until oatmeal is slightly brown.
  4. Take off heat. Stir in raisins.
  5. Cool mixture. Store in an airtight container (jar or plastic bag).

Notes

  • For a less expensive and dairy-free version, omit the powdered milk.  Nutritionally, there will be slightly less calcium and protein.
  • Try baking in the oven. Once the first six ingredients are combined, transfer to a baking pan and bake at 325 degrees F for twenty minutes or until golden brown, stirring half way through.
  • Try adding any of these ingredients: one teaspoon cinnamon, chopped nuts, dried fruit, wheat germ or coconut.
  • Serve with milk, yogurt, fresh or canned fruit.
  • Honey is not recommended for children under 1 year old.

My Family and I really liked this granola! I made two different kinds that differed a lot but still came out great. I didn't use powdered milk in it but it still turned out great and it smelled really good! When I get the chance, I will definitely make this again!

Wow, this recipe is SO FAST!  I made it with 20 elementary kids as part of an after school healthy snacks club.  They all loved putting the ingredients into the skillet and then incorporating the final product into the Food Hero Banana Bobs recipe!

I make these recipes every week and this recipe has no modification for DAIRY FREE.  I came up with an alternative since we know several children with milk and dairy allergies.  Mix together all of the ingredients in a bowl, omitting the powdered milk.  Once you have all of the oats coated, you then pour it out on a baking sheet and bake it in a 400 degree oven for 15 minutes, stirring every 5 minutes.   It turns out beautifully browned and tasty.  But, most importantly, it is Dairy Free.

Love this recipe:)  I do not keep powdered milk on hand and I have made this recipe without it many times and it comes out great.  My favorite variation is to replace the vanilla with maple extract and use dried cranberries and pumpkin seeds in place of the raisins and sunflower seeds.  I would say that even with baking, you need to watch the granola carefully because it can turn from golden brown to burnt very quickly.
 

Very good. Can be used as a base and add different dried fruits and nuts. I found it easier to bake as the skillet must be watched carefully to avoid burning. I bake at 350 for about 20 min, stirring once after 10 min.

Great recipe to make and use in making Yogurt Parfaits!  Easy to adjust for students with various allergies.
