Use these recipe sheets to prepare for larger groups:

Ingredients

1 Tablespoon vegetable oil
½ medium onion, chopped (about ½ cup)
½ head red cabbage, thinly sliced (about 6 cups)
¼ cup vinegar
¼ cup sugar
½ teaspoon salt
2 apples, chopped

Directions

  1. Wash hands with soap and water.
  2. Rinse or scrub fresh fruits and vegetables under running water before preparing.
  3. Heat oil in a large saucepan or skillet over medium heat.  Add onion and cook until clear, about 3 to 5 minutes.
  4. Add cabbage, vinegar, sugar and salt. Mix well and add apples.
  5. Reduce heat to low. Continue cooking, stirring a few times, until cabbage is soft, about 30 minutes. Serve warm or cold.
  6. Refrigerate leftovers within 2 hours.

Notes

  • Add cold leftovers to a sandwich or wrap!

Comments

This dish has been a suprise hit in hands-on cooking workshops with participants.  Feel free to substitute green cabbage if that is what you have on hand.  Any type of apple works.

This is a tasty and attractive recipe. Some found it a touch sweet, but most of us loved its colorfulness!
