Roasted Onions

Tender roasted onions with a mild caramelized sweet flavor and a slight crisp.

Ingredients

2 medium onions
1 ½ teaspoons vegetable oil
¼ teaspoon salt
⅛ teaspoon black pepper

Directions

  1. Wash hands with soap and water.
  2. Rinse or scrub fresh vegetables under running water before preparing.
  3. Preheat oven to 425 degrees F.
  4. Peel off papery layers and trim off root end of onions. Cut onion into quarters.
  5. Toss with oil, salt and pepper. Place cut-side down on a baking sheet.
  6. Roast until tender, about 20 to 25 minutes.
  7. Refrigerate leftovers within 2 hours.

Notes

  • To make clean-up easy, cover the baking sheet with foil or parchment paper.
  • Drizzle with 1 to 2 teaspoons of balsamic vinegar before serving for a different flavor.

Comments

Roasted onions carmelize and develop a delicious sweet flavor.  I frequently prepare this recipe as a side dish and use the leftovers in sandwiches, burgers or salads.
