Guacamole

Enjoy this easy and delicious guacamole as a topping or a dip. Thanks to the Latin Heritage Workgroup for their assistance.

Ingredients

2 ripe avocados, halved, seeded and scooped from peel 
2 Tablespoons finely diced onion (try red) 
1 cup chopped tomato (optional) 
1 Tablespoon chopped hot pepper (try serrano or jalapeño) 
2 Tablespoons lime juice  
¼ to ½ teaspoon salt 
2 Tablespoons chopped cilantro  

Directions

  1. Wash hands with soap and water.
  2. Rinse or scrub fresh produce before preparing.
  3. In a medium bowl, mash the avocado to the texture you like.
  4. Stir in remaining ingredients.  
  5. Refrigerate leftovers within 2 hours. 

Notes

  • For more heat, add more hot pepper. For less heat, try adding chopped bell pepper.
  • Enjoy as a dip or a topping for tacos, quesadillas or a grain bowl. 

Comments

This guacamole was so easy and made the perfect dip for my quesadilla. I also made the Salsa Verde recipe to try something new and add some spice to my lunch. Delicious!
