Garlicky, tender garbanzo beans sauteed with spinach for a warm and delicious meal.
Spinach with Garbanzo Beans
Ingredients
2 teaspoons vegetable oil (try olive oil)
2 cloves garlic, minced or ½ teaspoon garlic powder
1 cup chopped onion
1 package (10 ounces) frozen spinach, thawed and drained
1 can (15 ounces) garbanzo beans, drained and rinsed
½ teaspoon cumin
¼ teaspoon salt
Directions
- Wash hands with soap and water.
- Rinse fresh vegetables under running water before preparing.
- Add oil, garlic and onion to a large skillet. Cook over medium heat about 5 minutes or until onion becomes clear. If you use garlic powder, add it in step 3.
- Add spinach, garbanzo beans, cumin and salt. Cook until heated through, mashing the beans slightly with a spoon. Serve warm.
- Refrigerate leftovers within 2 hours.
Notes
- Serve as a side dish or as a spread with bread, crackers or pita chips.
- Add more garlic, if desired.
- Cook your own dry beans. One can (15 ounces) is about 1 ½ to 1 ¾ cups drained beans.

We found this recipe very bland. I've made it three times now and have finally settled on adding 1 tablespoon chili powder, 1 teaspoon cumin, and 1 teaspoon lemon juice. Add the spices with on the onions as they cook. We preferred it mashed very thoroughly (or pulsed in a food processor) to make a chunky dip.. Friends at the Superbowl Party thought it very tasty, It's nice to have a Spinach Dip that is low in fat.
