Spinach with Garbanzo Beans

Garlicky, tender garbanzo beans sauteed with spinach for a warm and delicious meal.

Ingredients

2 teaspoons vegetable oil (try olive oil)
2 cloves garlic, minced or ½ teaspoon garlic powder
1 cup chopped onion
1 package (10 ounces) frozen spinach, thawed and drained
1 can (15 ounces) garbanzo beans, drained and rinsed
½ teaspoon cumin
¼ teaspoon salt

Directions

  1. Wash hands with soap and water.
  2. Rinse fresh vegetables under running water before preparing.
  3. Add oil, garlic and onion to a large skillet. Cook over medium heat about 5 minutes or until onion becomes clear. If you use garlic powder, add it in step 3.
  4. Add spinach, garbanzo beans, cumin and salt. Cook until heated through, mashing the beans slightly with a spoon. Serve warm.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Serve as a side dish or as a spread with bread, crackers or pita chips.
  • Add more garlic, if desired.
  • Cook your own dry beans. One can (15 ounces) is about 1 ½ to 1 ¾ cups drained beans.

Comments

We found this recipe very bland.  I've made it three times now and have finally settled on adding 1 tablespoon chili powder, 1 teaspoon cumin, and 1 teaspoon lemon juice. Add the spices with on the onions as they cook. We preferred it mashed very thoroughly (or pulsed in a food processor) to make a chunky dip.. Friends at the Superbowl Party thought it very tasty,  It's nice to have a Spinach Dip that is low in fat.
