Melon and Mint

Fresh and simple fruit salad with mint and lime.

Ingredients

1 Tablespoon lime juice
¼ cup fresh mint leaves
2 Tablespoons packed brown sugar
3 cups watermelon cubes
3 cups honeydew cubes

Directions

  1. Wash hands with soap and water.
  2. Rinse or scrub fresh fruits under running water before preparing.
  3. Blend lime juice, mint leaves and brown sugar together in a small food processor.
  4. Place melon cubes in a bowl. Drizzle dressing over melon and toss gently.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Try with other types of melon such as cantaloupe or crenshaw.
  • Try omitting the brown sugar and adding crumbled feta cheese.

This recipe is always a hit!  I've made it for students several different times, and everyone is surprised by how great all the flavors go together.  

I never knew that melon, mint and lime went so well together! It's such a refreshing treat. I found that a small watermelon worked great with the amount of lime, sugar and mint suggested.

This was another recipe I was surprised about liking because I had never heard of this combo but now whenever I am cutting up a melon I either make the full recipe or at least throw in some chopped up mint. So yummy!

I made this recipe for a class picnic and everyone absolutely loved it! The mint and lime gave this dish a very refreshing flavor, perfect for those warm summer days! Will definitely be making this recipe again.
