Zucchini Stir-Fry

Fast veggie stir-fry with lots of umami flavor. Ready in less than 30 minutes!

Ingredients

1 Tablespoon vegetable oil
2 cups chopped zucchini
2 cups chopped bell pepper (green or red, about 2 large or 4 small peppers)
1 cup chopped onion (1 medium onion)
2 teaspoons low-sodium soy sauce
½ teaspoon garlic powder

Directions

  1. Wash hands with soap and water.
  2. Rinse fresh vegetables under running water before preparing.
  3. Heat the oil in a large skillet. Add the zucchini, pepper and onion to the skillet.
  4. Cook over medium high heat until the veggies are lightly brown, about 4 to 6 minutes. Stir a few times while cooking.
  5. Add soy sauce and garlic powder. Stir and cook for 2 minutes.
  6. Refrigerate leftovers within 2 hours.

I love this recipe! Quick and easy to make and so delicious. It also is great leftover, I usually add it with some cooked tofu and rice!

This is a great simple recipe.  Since all of these items are growing at the same time this will be a great one to use at the food pantries for all the produce that gets donated.
