Summer Cucumbers

A quick and simple side dish of crisp cucumber and onion with tangy red wine vinegar.

Ingredients

5 cups sliced cucumbers
½ cup sliced red onion
½ teaspoon salt
¼ teaspoon black pepper
2 Tablespoons red wine vinegar

Directions

  1. Wash hands with soap and water.
  2. Rinse fresh vegetables under running water before preparing.
  3. In a large bowl, combine cucumbers, onion, salt, black pepper and vinegar.
  4. Refrigerate leftovers within 2 hours.
