Apple Sandwiches

NotesVideo

Recipe Notes

Sprinkle the peanut butter with grated carrot, chopped nuts, seeds or granola instead of, or along with, the raisins.

Try other nut or seed butters, such as almond, hazelnut or sunflower seed.

Use other dried fruit pieces, such as cherries or cranberries.

Ingredients

1
medium apple
2 Tablespoons
peanut butter
1 Tablespoon
raisins

Directions

1. Wash the apple under cool running water and dry. Cut in half from the stem down and lay each half cut-side down on a cutting board. Slice each half into 6 half-round slices and cut out the core.

2. Spread 1/2 teaspoon of peanut butter on one side of each apple slice.

3. Put 4 to 6 raisins on top of the peanut butter on one apple slice. Top with another apple slice, peanut-butter side down. Squeeze gently.

4. Continue with remaining apple slices.

Notes

Sprinkle the peanut butter with grated carrot, chopped nuts, seeds or granola instead of, or along with, the raisins.

Try other nut or seed butters, such as almond, hazelnut or sunflower seed.

Use other dried fruit pieces, such as cherries or cranberries.

This made my afternoon snack even more enjoyable (and I never knew apples tasted so good with raisins and almonds!)

It's helpful to cut the apples at an angle (following the angle of the apple as it's face down on the cutting board) and not just directly perpendicular. This helps make the slices fall flat on the board rather than an oblong-shape like apple slices are normally cut, and the nut butter and toppings stay more intact this way.

This recipe tastes fabulous with almond butter, raisins, and cut/slivered almonds if you have them! It adds a great nutty crunch and flavor.

These make for an easy and simple, yet fun and seemingly special, snack. I love the peanut butter, raisin, apple combo. I also tried adding shredded carrot and loved that, too. I tried a short cut of spreading pb on only one apple slice rather than both...but the insides held together better when I did both sides like the directions suggest.
