Roasted Bell Peppers

Only 4 ingredients to make these roasted sweet peppers with Italian spices.

Ingredients

4 bell peppers
2 teaspoons vegetable oil
½ teaspoon Italian seasoning
½ teaspoon garlic powder
¼ teaspoon each salt and black pepper

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 450 degrees F.
  3. Rinse bell peppers and remove tops and seeds. Cut peppers in half and rub with vegetable oil. Place cut side up on a rimmed baking sheet and sprinkle with Italian seasoning, garlic powder, salt and black pepper.
  4. Roast until peppers are tender and blistered in spots, about 30 to 35 minutes.
  5. Refrigerate leftovers within 2 hours.

Notes

No Italian seasoning? Use 1 teaspoon dried oregano, 1 teaspoon dried basil and ½ teaspoon garlic powder.

Comments

I make these all the time, roasting really brings out the sweet flavor of bell peppers.   I cut them into thinner strips and roast at 425 degrees.  Because the pieces are smaller, they are usually done in about 15 minutes.
