Ingredients

1 egg
½ cup canned pumpkin
1 ¾ cups nonfat or 1% milk
2 tablespoons vegetable oil
2 cups flour
2 tablespoons brown sugar
1 tablespoon baking powder
1 teaspoon pumpkin pie spice
1 teaspoon salt
5 tablespoons raisins (optional, to make faces)

½ taza de calabaza tipo "pumpkin" enlatada
1 ¾ tazas de leche 1% o sin grasa
2 cucharadas de aceite vegetal
2 tazas de harina
2 cucharadas de azúcar morena
1 cucharada de polvo de hornear
1 cucharadita de condimento para pastel de calabaza
1 cucharadita de sal
5 cucharadas de pasas (opcional, para hacer caras)

Instructions

  1. Combine eggs, pumpkin, milk and oil in large mixing bowl.
  2. Add flour, brown sugar, baking powder, pumpkin pie spice and salt to egg mixture. Stir gently.
  3. Lightly spray a large skillet or griddle with non-stick cooking spray or lightly wipe with oil. Heat skillet or griddle over medium-high heat (300 degrees in an electric skillet). Using a 1/4 cup measure, pour batter on hot griddle.
  4. Put a face on the jack-o-lantern, using raisins for eyes and teeth. Drop raisins in batter while it cooks.
  5. Pancakes are ready to turn when tops are bubbly all over, and the edges begin to appear dry. Use a quick flip with a broad spatula to turn pancakes. Turn only once. Continue to bake until bottoms are brown and dry.
  6. Refrigerate leftovers within 2 hours.

Preparación

  1. Mezcle el huevo, la calabaza tipo "pumpkin", la leche y el aceite vegetal en un recipiente hondo.
  2. Añada la harina, el azúcar morena, el polvo de hornear, las especies y la sal. Mezcle suavemente.
  3. Unte la sartén ligeramente con aceite líquido o en espray. Caliente la sartén a fuego medio alto (350 grados F en una sartén eléctrica). Esparza 1/4 de taza de la mezcla sobre la sartén caliente.
  4. Ponga caras a los panqueques de calabaza usando las pasas como ojos y dientes. Póngalos en la mezcla cuando se esté cocinando.
  5. Cocine la mezcla hasta que en los panqueques aparezcan burbujas por encima. Use una espátula ancha para voltear los panqueques. Voltee solo una vez. Continúe cocinando hasta que los dos lados estén dorados y secos.
  6. Refrigere lo que sobre dentro de las siguientes 2 horas.

Notes

  • No pumpkin pie spice? Use 1/2 teaspoon cinnamon, 1/2 teaspoon dry ginger, and 1/8 teaspoon cloves or nutmeg.
  • Try using 1 cup whole wheat flour and 1 cup all-purpose flour for more whole grains!
  • To see if skillet is hot enough, sprinkle with a few drops of water. If drops skitter around, heat is just right.
  • Top with applesauce, fresh fruit or yogurt.

Notas

  • ¿No tiene condimento para pastel de calabaza? Use 1/2 cucharadita de canela, 1/2 cucharadita de jengibre seco y 1/8 cucharadita de clavo de olor o nuez moscada.
  • ¡Trate de usar 1 taza de harina de trigo integral y 1 taza de harina para más granos enteros!
  • Para saber si la sartén está lo suficientemente caliente, rocíele unas gotas de agua. Si le salen burbujas que se mueven alrededor, está lista la temperatura.

  • Cubra con pure de manzana, fruta fresca o yogur.
