Carrot Raisin Salad

Quick and easy side dish with a creamy and flavorful dressing. Only 4 ingredients and ready in 15 minutes!

Ingredients

2 cups shredded carrot (about 4 carrots)
½ cup raisins
2 Tablespoons mayonnaise or salad dressing
2 Tablespoons low-fat plain yogurt or orange juice

Directions

  1. Wash hands with soap and water.
  2. Combine carrots and raisins in a serving bowl.
  3. Mix mayonnaise or salad dressing with yogurt or orange juice.
  4. Pour mixture over carrots and raisins and chill until serving time.
  5. Refrigerate leftovers within 2 hours.

Notes

  • Try adding chopped nuts or sunflower seeds.
  • Try adding ½ to 1 cup crushed, drained pineapple.

Comments

I make this and add 8 oz can of crushed pineapple. You can drain it or use the juice in place of the orange juice.

I like to add a small handful of chopped nuts or seeds - chopped almonds or sunflower seeds are my favorite in this salad.

I liked the carrot and raisin combo.  It seemed a little unusual at first but it tasted really good!
